What is the Barbacoa?

Before being a recipe, the barbacoa is an ancestral traditional cooking technique. Originally, the meat is cooked slowly in a pit dug into the earth, wrapped in agave leaves. Commonly, he uses lamb but sometimes goat or also beef. This stew must cook in its juice, without having direct contact with the fire.

Some time ago we offered a plate of barbacoa in the form of tacos. For a few weeks, we have wanted to evolve the dish in order to transcribe the friendly tasting experience that we often enjoy with the family around a shared meal. We wanted to prepare it in the form of a more bistronomic dish where guests compose their own tacos.

You will find the shredded and glazed barbacoa with a reduced lamb juice, a frijoles puercos puree made from beans and lamb chorozo, a pico de gallo Cocos de Goëlo, an ultra-melting grilled onion, our homemade corn tortillas and, as tradition dictates, the lamb broth from the cooking juice. This broth can be drunk or used as a base to dip your tacos.
